Ingredients
- 3/4 lb. raw blue crab meat
- 1 tsp. dijon mustard
- 1/2 c. seasoned bread crumbs
- 2 tbsp. lemon juice
- 4 egg whites
- 2 scallions, chopped
- 2 tbsp. light mayonnaise
- 1 tbsp. canola oil and saute crab cakes
Directions
- Combine 3/4 pound raw blue crab meat with 1 teaspoon Dijon mustard, 1/2 cup seasoned bread crumbs, 2 tablespoons lemon juice, 4 egg whites, 2 scallions, chopped (use both the white and green parts), and 2 tablespoons light mayonnaise. Form mixture into 4 large patties or 8 small patties. In a skillet, heat 1 tablespoon canola oil and saute crab cakes over medium heat on each side until cooked through, about 4 to 5 minutes on each side.
